 Sicilian cuisine is famous for its diversity and the use of many fresh vegetables, such as eggplant, peppers and tomatoes, as well as fresh spices and herbs and seafood. The garlic and parsley are the undisputed masters, while any dish without oregano, basil, thyme or rosemary most probably isn't Sicilian. The people of this southern Italian island highly value the aromatic olive oil, fresh fish and local wines
